I love green peas kind of random but so yummy. This salad is so fresh and light. The pesto pairs perfectly with the peas. Trader Joe’s has great English peas in the produce section. This is best served room temperature and makes a perfect side to any grilled meat.

P E S T O P E A S A L A D

1 bag English peas ( I buy these at Trader Joes)

handful cherry tomatoes sliced in half

1/4 red onion diced

1 orange bell pepper diced

8 cooked pieces bacon

handle pine nuts

shredded white cheddar cheese

pesto + olive oil

Cook peas according to package and let cool. Add peas and other veggies to a large bowl. Whisk pesto with a few drizzles olive oil. Season with salt and pepper and drizzle all with dressing.
