Broccoli Salad

If you are from the South chances are you have had broccoli salad. There are so many similar versions of this salad, but this is one is my favorite. The crunchy broccoli, salty bacon, sharp cheddar and sunflower seeds all mixed with a creamy dressing is so good. This makes a great side dish. We served ours with Eggplant Casserole Monday for dinner. Growing up my mom always made this with Spanish peanuts which I find are hard to find, so I have been using sunflower seeds instead and really like the combo. It saves well in the fridge for a few days. Enjoy!

B R O C C O L I S A L A D

3 small crowns broccoli, chopped

1/2 red onion diced

10-12 pieces cooked and crumbled bacon

1/2 cup salted sunflower seeds

8 oz grated sharp cheddar cheese ( I always use Cracker Barrel and grate it myself)

1 cup mayo

3 tablespoons vinegar

1/4 cup sugar

Whisk together mayo, vinegar, and sugar. In a large bowl mix broccoli, onion, bacon, cheese and sunflower seeds with the mixed dressing.
