Seafood Lasagna

I posted my mom’s Seafood lasagna on instagram and had lots of requests to share her recipe. Since we are on family vacation this week we have been trying to make easy stress free meals to feed us all. My mom made this lasagna before we left, froze it and then we just cooked it for dinner! Could not be easier. We grew up eating this lasagna, it is a tried and true family favorite! My kids love it as well! It is a great meal to make ahead and serve. Perfect for any seafood lovers!

S E A F O O D L A S A G N A

1 white onion diced

2 tablespoons butter

1 8oz package cream cheese

1.5 cups cottage cheese

1 egg

2 teaspoons dried basil

1/2 teaspoon salt

1/2 teaspoon peper

2 cans cream of mushroom soup

1/3 cup milk

1/3 cup white wine

1.5 pounds cooked shrimp (shelled)

8 oz lump crab meat

8 cooked lasagna noodles

2 cups grated sharp cheddar cheese

1/2 cup Parmesan Cheese.

Preheat oven to 350 degrees. Grease a 9 x 13 baking dish. In a pan saute onion with the butter about 5-7 minutes. Remove from heat and stir in cream cheese, cottage cheese, egg, basil, and salt and pepper. In another bowl mix the 2 cans of mushroom soup, wine and milk. Add in the shrimp and crab meat and mix well. Place 4 lasagna noodles on the bottom of the dish then layer 1/2 the cream cheese mixture and then half the shrimp/crab mixture. Repeat. Cover the top with shredded cheddar and Parmesan cheeses. Bake 45-55. minutes.

    Can you use no bake noodles with this recipe? And how do you cook your shrimp?

      My mom said it gets soggy with the no bake noodles better to use the kind you cook yourself. You can just buy the shrimp that is cooked at seafood counter!
