Greek Chicken Bowls

I am finally starting to get back in the routine of cooking more family dinners, once school starts back I will be even more on my A Game. I have made this dish several times now and we all love it. The chicken is easy to prepare and so flavorful. I have been using Right Rice as the base which is a healthier alternative to rice. It is basically rice made out of veggies, you can find it at Whole Foods and on Amazon. You could easily sub regular rice, brown rice or cauliflower rice. The beauty of this dish is you can add on any toppings you love. My kids love broccolini so I added it in for an extra veggie. I have been trying to cut back on cheese so I left the feta off this time but it is wonderful with a little crumbled feta. We love to top ours with tzatziki and hot sauce! Enjoy!

G R E E K C H I C K E N B O W L S

4 chicken breasts sliced into tender size

1 bottle Greek Dressing ( I like the Primal Kitchen one or this Pepperoncini Vinaigrette)

2 tablespoons Greek Seasoning ( I love this one its so good and flavorful)

1 package Right Rice ( I used the original flavor, this pack is awesome with all the flavors to try)

2 heads Broccolini

diced cucumbers

diced tomatoes

Kalamata olives

Tzatziki sauce

other toppings : red onion, pepperoncinis, feta cheese, diced bell pepper

In a baking dish layer the chicken tenders in a single row. Sprinkle with salt and pepper. Then sprinkle with 2 tablespoons Greek seasoning. Kind of toss together so the seasoning is on all sides. Then pour about 1/2 to 3/4 the bottle of Greek dressing over top the chicken. You may need more or less depending on the size of your chicken. Place chicken in oven at 350 degrees and bake 25-30 minutes.

On a baking sheet layer the broccolini and drizzle with olive oil and salt and pepper. Roast at 350 degrees (can cook the same time as chicken) about 15 minutes. I usually pop in the broccolini halfway through the chicken cooking so they are done the same time.

Cook Right Rice according to package.

Layer rice on a bowl or plate and top with chicken, broccolini, cucumbers, tomatoes, olives and tzatziki sauce.

    You posted this in your stories so we ate it last night and it was delicious!! We did hummus instead of tzatziki (only bc i couldnt find it at the store) and added roasted cauliflower, bell peppers and feta. SO YUM! Such a good twist on my normal rice and roasted veggies. O Thank you for the idea!
