Lately I have been trying to incorporate more fish into my diet. I buy the Tonnino Tuna in bulk from Amazon and it is the only tuna I eat now. Once you try it you won’t go back to regular canned tuna. It is the best quality tuna and all the flavors are so good. I used the Lemon Pepper for this salad, it is one of my favorites. This salad is so light and refreshing yet fulling because of the beans and tuna. The capers and olives add a zesty zing to the salad. it is tossed with a super light dressing of olive oil and champagne vinegar. This salad gets better the longer it sits! best served room temperature. I love this salad served over a scoop of hummus and topped with the Trader Joe’s Chili Garlic Crunch! Enjoy!

1 can Lemon Pepper Tonnino Tuna
1 can cannellini beans rinsed and drained
1 cup halved cherry tomatoes
4 tablespoons capers
1/4 cup sliced green olives
1/2 small red onion diced
2 tablespoons parsley
1 garlic clove
1/2 teaspoon red peper flakes
2 tablespoons champagne vinegar
1/4 cup olive oil
In a bowl combine drained beans, cherry tomatoes, red onion, capers, green olives, parsley. Season with salt and pepper.
In a bowl whisk together olive oil, champagne vinegar, garlic clove and red pepper flakes. Pour dressing over salad and toss all together!
