Marinated Artichoke and Hearts Palm Salad

This year I am focusing on eating less meat and more plant based meals. I am not giving up meat but I just want to cut back, I honestly feel better when I eat less meat especially red meat. This marinated salad recipe is a new creation I am obsessed with! It is filled with so many of my favorite healthy foods- artichokes, hearts of palm, white beans and lots of herbs!! A fresh lemon viniagrette gives the salad a burst of brightness and zest!

If you don’t have a Walmart+ membership it just makes life so much easier especially when meal planning and prepping. I use my Walmart+ membership all the time when I need ingredients for recipes and family meals I am planning.  Walmart+ makes it super easy with same-day delivery ($35 order min. Restrictions apply.)! Walmart grocery is the BEST! They have such huge selection and always have what I need for my recipes! They have great quality produce and they also have a really nice organic selection!  Walmart+ is especially great if you forget an ingredient or think of a last minute addition to your weekly menu you can get unlimited free delivery on your groceries ($35 order minimum, some restrictions apply). M A R I N A T E D A R T I C H O K E + H E A R T S O F P A L M S A L A D

1 can white beans, drained and rinsed

1 jar or can of hearts of Palms, sliced thinly

1 14 oz jar marinated artichoke hearts, chopped into bite size pieces

1 cup cherry tomatoes halved

1/2 small red onion diced

5 tablespoons capers

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh chives

2 tablespoons chopped fresh parsley


1/4 cup olive oil

juice of one lemon

3 tablespoons champagne vinegar

salt and pepper

In a large bowl combine the artichoke hearts, hearts of palm, white beans, cherry tomatoes, red onion, capers, basil, parsley and chives. Toss all together. Mix dressing in bowl or shaker. Shake well to blend. Pour dressing over the salad and stir to combine. This is best served room temperature.
