Cheesy Baked BBQ Chicken

I made this Cheesy BBQ Chicken for dinner last night and it was so delicious. I have my regular go to dinner recipes but I have been trying to step out of the box and make some new recipes. Thanks to Pinterest, my cookbooks and cooking magazines I have endless recipe inspiration! I came across this one on Pinterest made a few adaptations and truly loved it. You can whip this together in less than 10 minutes. I consider this like my favorite BBQ chicken pizza but minus the bread! If you don’t like heat don’t add the jalapeños on top but they truly are the perfect addition with the tangy BBQ Sauce. I snapped a picture of the BBQ sauce I used because we really loved it! I was going to serve this over a salad but my kids instead voted for a side of asparagus which was great with it. Enjoy!

C H E E S Y B B Q C H I C K E N (original recipe from Little Spice Jar)

4 boneless and skinless chicken breasts

1 jar BBQ Sauce (I used the one pictured above and really liked it)

1 cup shredded mozzarella cheese

1 cup shredded Gouda cheese

1/4 a red onion sliced thinly

pickled jalapeños (can omit if you don’t like the heat)

parsley to sprinkle on top

salt and pepper

1 teaspoon garlic powder (sprinkled evenly over chicken breasts)

In a baking dish spread a layer of BBQ Sauce on the bottom. Nestle the chicken breasts on top of the sauce. Season with salt, pepper and garlic powder. Add more BBQ sauce ( I used prob 3/4 of the bottle total)

Bake at 350 degrees for 20 minutes.

Remove from the oven and cover the top with the both the shredded cheeses. Sprinkle sliced onions and pickled jalapeños on top. Bake another 15-20 minutes. I used a meat thermistor to make sure the chicken was done. Remove from oven and cool and enjoy!
