This salad has apparently gone viral recently. Rumor has it that Jennifer Aniston ate this salad for lunch almost everyday while on set of Friends. It reminds me a bit of a tabbouleh salad, very similar. I loved how fresh it was, I think I had 3 servings when I first made it! The fresh herbs, with the lemon juice, grains and feta is such a delicious combo ! The chickpeas help to bulk this salad up and make it hearty. This is a salad that will keep you full! This will save well in the fridge for several days. I served mine with hummus and olives but would also be great with grilled chicken or shrimp! Enjoy!

1 cup cooked Bulgar Wheat ( could also sub quinoa or Farro)
diced cucumber
diced red onion
chopped pistachios
1 can chickpeas drained and rinsed
1/2 cup chopped fresh parsley
1/2 cup chopped fresh mint
6 oz feta cheese crumbled
1/4 cup olive oil
juice of 2 lemons
salt and pepper to taste
Cook the bulgar wheat according to the package and let cool. Place in a bowl and top with all other ingredients. Add olive oil, lemon juice and salt and pepper. Toss it all together. Add more lemon juice and salt and pepper if needed to taste.
