I love whipping up some sort of salad each week to have on hand for lunch. Just makes it easy at lunch time to have it prepped and ready to eat. This is hands down my favorite tuna salad. Last week I paired it with the easiest cabbage salad and they were perfect together. Both will save in the fridge for several days. Enjoy!
T U N A S A L A D
2 jars toninno tuna drained
1/2 red onion diced
1/3 cup diced pickles (I use Grillo’s)
2 hard boiled eggs diced
1/3 cup relish
1/4 cup capers
1/4 cup mayo
1 tablespoon dijon
1 tablespoon champagne vinegar
Place tuna, red onion, pickles, eggs, relish and capers in a bowl. In a small bowl whisk mayo, dijon and vinegar. Season with salt and pepper. Pour over tuna and toss all together. You may need to add more mayo depending on consistency.

1 small head green cabbage
1 bunch green onions sliced
3 baby cucumbers diced
3 tablespoons fresh dill chopped
1/4 cup olive oil
5 tablespoons rice wine vinegar
Mix all together in a bowl. I used my hands to massage the dressing.
