20 Minute Pesto Tortellini

I have a downright amazing recipe for you guys today that takes 20 minutes to whip together! This takes frozen tortellini and transforms it to the yummiest pasta salad EVER. I used the Walmart Great Value Brand Tortellini, a favorite of mine because you get a huge bag for $3. I always keep this stocked in my freezer. The kids love it simply tossed with butter and Parmesan Cheese. This version is a little more elevated for the adults:)

I love the Marketside and Great Value lines at Walmart they have the highest quality ingredients for a lesser price always. They carry all my favorite organic cooking items at a lower price but same amazing quality. The Great Value canned artichoke hearts and hearts of palm are my favorite to stock up on. I always have these in my pantry to toss in salads. Their chopped olives are great to have on hand too. The Marketside lettuces are always so fresh and they have so many organic choices which are my go to. I usually buy a large container of the Spinach to have on hand for smoothies and my chopped Greek Salad. You won’t find a better price on pine nuts than the Great Value bag I used for this recipe! I love pine nuts so much and tip if you store them in your fridge they last longer and don’t get stale.

Also I recently became addicted to this Marketside Spicy Hummus. I just bought 3 more containers it is so delicious. I love dipping fresh veggies in it!

1lb bag frozen cheese tortellini

1 can Artichoke Hearts

1 small jar sun dried tomatoes with oil

1 bunch Asparagus

1.5 cups fresh Spinach

1 cup Pesto

1/2 cup Shaved Parmesan Cheese

1/4 cup Pine Nuts

Cook Tortellini according to package then drain in a bowl with paper towels to soak up extra water.

Cut the asparagus into 1 inch pieces.

In the same pot you cooked the tortellini in add the chopped asparagus to the still boiling water. Cook for 2 minutes then place asparagus in an ice bath.

Remove the paper towels from the tortellini gently toss so they are not stuck together. Then add 1 to 2 tablespoons of the sun-dried tomato oil and toss.

Add in artichoke hearts, asparagus, spinach, olives, sun dried tomatoes, and drizzle all with Pesto. Toss together and then add in Parmesan Cheese and. pine nuts. Add more pesto if needed!
