If you think cauliflower rice is bland and boring then you will love this version. I found this recipe on GOOP prob 6 months ago and have made it frequently since then. It is super easy only a handful of ingredients and actually really healthy. I personally love kimchi, so I love the addition of it in the cauliflower rice. It gives it such great flavor. Also kimchi is so good for your gut health. This is great alone but we also like ours served with teriyaki chicken. Enjoy!

1 bag riced cauliflower
1 head kale, de-stemmed and chopped
1 bunch green onions sliced
1 tablespoon sesame oil
3 tablespoons soy sauce
3-4 heaping tablespoons of kimchi
Add a little oil in a skillet and cook the cauliflower rice until slightly soft. Add in chopped kale and green onions. Add in sesame oil and soy sauce and cook a few more minutes. Stir in kimchi. I like to then let this simmer 15 minutes or so to let all the flavors mesh together. We like to serve ours with teriyaki chicken.
