We are done with our cleanse and I am craving all the salads. Last night we grilled steaks and had this salad as our side. It is a really simple salad only 4 ingredients and the dressing is only 2 ingredients. It is light, zesty and so delicious. Sautéing the almonds with a little olive oil and salt gives them the perfect crunchy salty bite. You can buy pre shredded Parmesan but I find when you shred your own it is so much better and more flavorful. This salad is best served and enjoyed right after you make it. It will save in the fridge about a day but definitely tastes best the day of! Enjoy!
S H A V E D B R U S S E L S + B A C O N S A L A D
1 bag Brussels sprouts, washed and shredded
10 pieces of cooked bacon crumbled
1/2 cup sliced almonds
Fresh Parmesan Cheese
2/3 cup olive olil
juice of 3 lemons
1/2 teaspoon salt and 1/2 teaspoon pepper
Slice or shred the Brussels Sprouts and place in a bowl. Meanwhile heat about a tablespoon olive oil in a small pan. Add in almonds and a little salt. Cook on medium heat about 5-7 minutes until they are slightly brown- be careful they can burn quickly so keep an eye on them. Add the almonds to the Brussels sprouts. Crumble the bacon slices and add in bowl as well. Top all with about 1/3 cup freshly grated Parmesan Cheese. To make the dressing simple whisk or shake together the olive oil, lemon juice and salt and pepper. Drizzle over salad and toss all together!
