Buffalo Chicken Pasta Salad

This salad recipe is for all my Buffalo sauce lovers like me. I love buffalo sauce, especially the Primal Kitchen brand. I could eat it with a spoon, it is so good! This pasta salad is filled with chicken, fresh mozzarella, veggies and tossed with a Greek Yogurt/Buffalo sauce dressing. The dressing is creamy yet not heavy and It is packed full of such vibrant flavors. You can save time and just use a rotisserie chicken, however I boiled two breasts and shredded them. This can be made ahead of time and saves In the fridge for a few days. I recommend bringing to room temperature before serving. If you store in the fridge overnight you may want to toss with more dressing before serving as the noodles tend to soak it up. Enjoy!

B U F F A L O C H I C K E N P A S T A S A L A D

1 bag pasta noodles, I used spirals

2 chicken breasts cooked and shredded

1 cup Spinach thinly sliced

1 bunch green onions

3 stalks of celery diced

3 mini bell peppers any color diced

1 cup cubed fresh mozzarella (could also use the mozzarella balls here)

2 tablespoons chopped parsley

D R E S S I N G

1 cup Greek Yogurt

1 and 1/4 cups Buffalo Sauce

1/2 teaspoon garlic powder

1 teaspoon dried chives

1 teaspoon dried dill

1 teaspoon salt

1 teaspoon pepper

Cook pasta according to package. Drain and then toss in a bowl. Add shredded chicken, celery, bell peppers, green onions, spinach, and mozzarella cheese.

Whisk all dressing ingredients together. Drizzle over salad and toss well. Top with fresh parsley. If you pasta seems too dry you many want to double dressing.
