I wanted to share a few of my go to lunches that we have been having on repeat lately. Most of these are pretty easy to make. They are light, filling and full of flavor because who likes a bland lunch?!?

I used my Tuna Salad recipe HERE and added in chickpeas. Serve on Romaine Lettuce.
Inspired by Jersey Mikes we make these all the time and I pile on the ingredients. I always use Boars Head turkey sliced fresh at the counter.

Greek Couscous Salad + Olives + Peppers + Pepperoncinis + Stuffed Grape Leaves + Hummus
same idea but with quinoa instead of couscous.

I Make these at least once a week. I am obsessed with this Primal Kitchen Buffalo sauce, I could legit drink it. It is incredible. This is Butter Lettuce + Provolone or Swiss + Sauerkraut +Primal Kitchen Buffalo Dressing.

Get creative here add in all your favorites. I always try and have veggies and protein like a hard boiled egg. I love hummus, Evans likes Pimento cheese on his.

I used this no mayo tuna recipe and stopped into lettuce. I added a side of veggies and hummus.

This is so simple. Arugula tossed with olive oil and lemon juice and salt and pepper. Topped with roasted asparagus, English peas (I just thawed right out of the freezer), watermelon radishes and fresh shaved Parmesan cheese.
