I made this dip last weekend and it was a huge hit and literally takes 5 minutes to whip together. The kids loved it too which is always a win. You could easily sub regular hummus for the base if you don’t want to use black bean hummus. Perfect easy appetizer for happy hour! The pita rounds are so good alone or with the dip. Frances Moon approves of both!
B L A C K B E A N H U M M U S D I P
1 container black bean hummus (I used the Lantana brand, Roots also has a great one)
chopped green onions
diced cucumber
diced tomatoes
olive oil
salt and pepper
pita rounds
In a dish layer the hummus spread over the bottom of the dish. Top with cherry tomatoes, cucumbers, green onions and drizzle with olive oil. season with a little salt and pepper.
For the pita rounds lay on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and EEB seasoning. Bake at 350 about 10-15 minutes. Flip each one halfway through cooking. These are delicious!!
