I love creating all different kinds of chicken salad to have on hand for my lunches during the week. This BLT Chicken Salad is next level. And if you hate mayo this Chicken Salad is for you! The dressing is made with Greek Yogurt for a little extra protein! I always keep things easy and use a Rotisserie chicken. The fresh herbs add a nice brightness. This is just a lovely and well balanced chicken salad packed with flavor but not heavy. I love this served on the @wasausa sourdough crackers for the perfect crunch, but it’s also great on a sandwich, or just plain! Enjoy and tag me if you try this recipe!
BLT CHICKEN SALAD
1 Rotisserie Chicken diced/shredded
1 bunch green onions
1 backup halved cherry tomatoes
8-10 slices bacon crumbled
1/2 cup diced pickles
2 tablespoons fresh basil
2 tablespoons parsley
DRESSING
1/2 cup Greek Yogurt
Juice of 1 lemon
3 tablespoons good olive oil
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon Dijon mustard
