
I have not one but two killer recipes for you guys today. Both would be perfect for Thanksgiving. I found all the ingredients for both recipes at Walmart. They have a great produce section with so many organic choices!!
B U T T E R N U T S Q U A S H S O U P

I large butternut squash cubed or a package of the pre cut kind
1 white onion
4 garlic cloves
avocado oil
1 quart chicken stock
truffle oil
1/2 cup heavy cream
crumbled bacon and pumpkin seeds for topping
On a baking sheet layer the cubed butternut squash, sliced white onion and whole peeled garlic cloves. Drizzle with avocado oil, salt and pepper and toss all together. Roast at 400 degrees for 40 minutes, tossing several times while they cook.
In a large pot add the chicken stock and roasted squash mixture. Using an immersion blender to blend the soup. Season with salt and pepper to taste and let simmer. Add in heavy cream and 2-3 teaspoons truffle oil.
Top with crumbled bacon and pumpkin seeds.

1 bag Brussels sprouts shredded
1 cup shredded Parmesan cheese
1 baguette thinly sliced
1 15 oz ricotta
parsley
dried cherries
2 tablespoons olive oil
juice of 2 lemons
1 tablespoon apple cider vinegar
In a sauté pan drizzle olive oil and add shredded Brussels sprouts. Season with salt and pepper and cook about 5-7 minutes until slightly wilted. Stir in Parmesan Cheese.
In a shaker mix together olive oil, lemon juice, and apple cider vinegar. Toss Brussels sprouts with this dressing.
Take the sliced baguettes and place on a baking sheet. Brush each one with olive oil and sprinkle with salt. Bake at 350 5-10 minutes until toasted.
In a small bowl take the ricotta and add a drizzle of olive oil, juice from a lemon and parsley. season with salt and pepper and mix together.
Take the ricotta mixture and spread on each baguette slice. Then top with the shredded Brussels Sprouts. Sprinkle all with dried cherries.
