Meet my new favorite Summer dinner | Caprese Grilled Chicken. Perfectly cooked grilled chicken sliced and piled high with a fresh chopped Caprese Salad. Out of this world good (and easy to make as well)! I love marinating my grilled chicken with Garlic Expressions dressing. It is so good on everything and gives the chicken really good flavor. I used 3 different types of cherry tomatoes here but one type is just fine! Enjoy!

4 boneless skinless chicken breasts
1 pint cherry tomatoes, quartered
1/4 cup diced red onion
1 cup cubes fresh mozzarella
3/4 cup fresh basil chopped
2 tablespoons pesto
2 tablespoons olive oil
1 tablespoon balsamic vinegar
Salt, pepper and garlic for seasoning chicken
Garlic expression dressing
Combine cherry tomatoes, mozzarella, red onion and basil in a bowl. In a small bowl whisk olive oil, pesto and balsamic vinegar with a little salt and pepper. Pour this over the chopped Caprese salad.
Season the chicken breasts with a garlic, salt and pepper blend. Pour over about half the bottle of garlic expressions dressing and let sit and marinade 30-45 minutes. Grill and let cool slightly. Slice into pieces and place on a platter. Spoon the chopped Caprese salad over top and enjoy!
