I like to consider this my no pasta pasta salad. It’s basically all the ingredients of my favorite pasta salad but with broccoli and cauliflower as the base instead of pasta. This is truly so delicious, and it gets better the longer that it sits. The broccoli and cauliflower soak up the Italian dressing and it’s just so good! Try this and let me know what you think!
CHOPPED ITALIAN BROCCOLI SALAD
1 large head broccoli chopped into bite size pieces
I head cauliflower chopped into bite size pieces
10-12 slices peppered salami diced
10-12 slices regular salami diced
1 cup halved cherry tomatoes
1/4 cup diced red onion
1/3 sliced green and black olives
5 mini bell peppers sliced
1 cup small mozzarella balls
2 tablespoons parsley
Half bottle Italian or Greek Dressing (I like @thenewprimal Italian dressing and @yomamasfoods Green dressing I did a combo of both for this salad
Place all ingredients in a bowl. Pour dressing over and toss. This gets better the longer it sits and saves for several days.
