
Starting the year off with less door dash and more cooking at home. This chopped Italian salad is so darn good. It takes a little time for chopping but trust me it’s worth it. It’s light yet filling at the same time!! Double meat and cheese are essential here! Try this and let me know what you think!

CHOPPED ITALIAN SALAD
1 head romaine finely chopped
1 small head radicchio finely chopped
1 green bell pepper diced
1 small cucumber diced
10 pepperonis sliced thinly
10 peppered salami sliced thinly
Sliced pepperoncinis
Chopped green olives
Smoked provolone sliced thinly
Fresh mozarella cubed
DRESSING
1/2 cup good olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
