It is no secret I love a veggie sandwich. I often get requests wanting to know how I make mine. I made the one pictured above this weekend with my Farmer’s market veggies and it was so good. Now is the perfect time to make a veggie sandwich with all the ripe in season and flavorful tomatoes. I also love just a good ole tomato sandwich with tomatoes, salt & pepper, and mayo- a super Southern sandwich:)
There are 4 keys to a legit veggie sandwich: 1) good bread. I love using a multigrain or 9 grain bread. If you have a local bakery use them, fresh baked breads that are less processed are always better. Harris Teeter fresh baked breads by Band of Bakers are really good and I also love Dave’s Killer Breads (they come in 3 different whole grain versions and they all are really good. 2) a tasty spread. Hummus is usually my go to and any flavor hummus will work. Right now I am loving Hope hummus in the original flavor. Roots also has really good hummus flavors. I also love to use veggie cream- making your own or picking it up from a local bagel shop is always better than store bought. It is super easy to make your own just bring the cream cheese to room temperature and add in chopped fresh herbs. I love to make one with dill and lemon juice. Other spreads I use sometimes are avocado mashed, sun-dried tomato tapenade and pesto. 3) cheese. I like cheese on everything. It is always a good addition to any veggie sandwich. I typically use provolone, havarti, or pepper jack. 4) Fresh veggies. In my opinion the more veggies the better. Pile them on.

sliced tomato
sliced cucumber
sliced red onion
shredded lettuce
hummus
provolone cheese
Spread hummus on both sides of the bread. Layer on veggies. Season tomato layer with salt and pepper. Cut in half and enjoy.

Here are a few other veggie sandwiches I have made in the past.
– 2 slices multi-grain bread ( I like Ezekiel or Eureka Organic Bread)
– 1 slice pepper jack cheese
– hummus ( I used Roots Lima Bean)
– Tomato sliced
– Cucumber sliced
– Red onion thinly sliced
– Grated Carrot (I use my cheese grater for this)
– 1/2 avocado sliced and drizzled with lemon juice
Toast the bread with the pepper jack cheese about 5-7 minutes until cheese is melted and bread toasted. Remove from oven and spread on the hummus. Layer on veggies and sprinkle with salt and pepper. Enjoy!

– Multigrain or Oat Bread
– Plain Greek Yogurt
– Fresh Dill
– Sliced Carrots
– Sliced English Cucumber
– Arugula sprouts
– Sliced Avocado
– Sea Salt
Combine Greek Yogurt with chopped fresh dill and salt and pepper. You can mix up as much as you want to save for future sandwiches. I mix about one cup of Greek yogurt with a tablespoon chopped fresh dill. Layer on the veggies and slice and serve. Be sure to sprinkle the avocado with sea salt it makes the flavors so much better! I toast my bread slightly to soften it up.
**Arugula Sprouts can be found near the regular sprouts in the produce section. I found mine at Harris Teeter and they were called Arugula MicroGreens.**

and if you need an idea for party food I love these mini cucumber sandwiches.
– 2 packages cream cheese room temperature
– 1/3 cup chopped fresh dill
– juice of one lemon
– 1 english cucumber thinly sliced
– 1 loaf thin white and wheat bread (I like Pepperidge Farms)
Let the cream cheese come to room temperature. Add in chopped dill, lemon juice, and salt and pepper. Mix well.
Use a mandolin to thinly slice the cucumber.
Spread both sides of bread with cream cheese and layer with cucumbers. Cut in half and then in half again. Each sandwich should make 4 mini triangles.
