
I have been on a journey to eat more protein. This Easy Veggie Egg Frittata is so simple to make, takes less than 5 minutes to assemble, it’s low carb and really filling. I used @bfreefoods grain free wraps for the crust – the quinoa chia seed one but any sort of wrap or tortilla would work here. Use any veggies you have on hand- this would be great with sausage or bacon added in as well. I topped it with arugula dressed with lemon juice and olive oil and it was perfection!


Easy Veggie Egg Frittata
Ingredients
4 eggs
1 B Free Quinoa Wrap
1 tablespoon milk
Cherry tomatoes
Arugula
Spinach
Crumbled feta cheese
Instructions
Layer wrap in a pie dish. Whisk together eggs with 1 tablespoon milk and salt and pepper. Layer cherry tomatoes, arugula, spinach, and goat cheese on top of wrap shell. Pour egg mixture over top. Bake at 350 degrees about 25-30 minutes until eggs are fully cooked.
Slice and top with more arugula and lemon juice!
