Everything Bagel Stacked Veggie Sandwich

Oct 14, 2021

It is no secret I love a veggie sandwich. I could honestly eat one everyday. I like to pile them high with as many veggies as I can fit between the bread. The Brueggars near us recently closed but I would always order a veggie bagel there and this is my spin on my order! If you have a local bagel place buy fresh bagels they are so much better then store bought. However I used Dave’s Killer Bread Everything Bagels for this sandwich and the bagel was actually so good. I love the Dave’s Killer Bread line, I feel like as far as store bought bread goes it is less processed. Any cream cheese will work although I am partial to veggie or jalapeño! Two additions that I think make the bagel are Everything but the Bagel Seasoning on the cream cheese and Trader Joe’s Italian Pepper Hot Bamba Sauce. I didn’t add the paper sauce at first just added on the side but loved it so much I put more on the sandwich. It has a kick so if you don’t like spicy leave it off! This is a messy eat but so good! Enjoy!

Everything Bagel

Cream Cheese- plain, veggie, scallion or jalapeno

Cheddar Cheese

Sliced Tomatoes

Sliced Cucumbers

Sliced Pickles

Sliced Red Onions

Sliced yellow bell pepper

Avocado

Shredded Lettuce

Sprouts

Lightly toast the bagel. Spread a layer of cream cheese then sprinkle with Everything but the Bagel Seasoning. Layer on Cheddar Cheese, lettuce, tomatoes, cucumbers, sprouts, red onion, bell pepper, pickles, and avocado. I like to do half of the veggies on each side and then stack all together. Add Italian Pepper Spread if desired.
