
I finally tried the viral trend of grating my hard boiled eggs to made an egg salad. This egg salad was a 10 out of 10! I will be making this on repeat. It’s a little tricky grating the eggs but I liked the mix of the grated eggs and then the bigger chunks at the end.
This egg salad is light and bright and not heavy at all. Adding in lots of fresh herbs and champagne vinegar really keeps this salad bright and vibrant. I just loved the consistency with the grated eggs. It is delicious on a bed of lettuce, piled high on toasted sourdough bread or my favorite is to make homemade pita chips to dip in it.
Try this egg salad I promise you’re going to love it!!

G R A T E D E G G S A L A D
8 hard boiled eggs
1/3 cup mayo
1 tablespoon Dijon
1 tablespoon Whole Grain Mustard
1 tablespoon champagne vinegar
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh parsley
1 tablespoon dried chives
1 teaspoon salt
1 teaspoon pepper
3-4 green onions sliced
A few drizzles good olive oil
Using a hand grater, grate your eggs. Add in mayo, Dijon, whole grain mustard, champagne vinegar, dill, chives, salt and pepper, green onions. Drizzle with good olive oil and mix all together well.
This is delicious alone, with homemade pita chip, and on toasted sourdough!
