This is hands down one of my favorite couscous salads. I make many versions of it but this is the original and so yummy. The dressing is so simple just olive oil and lime juice yet the salad has so much flavor. My mom made it recently when I was home last and I forgot how good it is! This is the perfect Summer salad. I often pack this with hummus and pita chips for lunch at the pool. Enjoy!
G R E E K C O U S C O U S S A L A D
1 cup dry couscous, cooked according to the box
halved cherry tomatoes
2 baby cucumbers diced
1 orange bell pepper diced
1/2 red onion diced
4 oz crumbled feta
1 can chick peas drained and rinsed
2/3 cup olive oil
juice of 2 limes
In a bowl whisk together olive oil and lime juice. Season with salt and pepper.
In a large bowl combine cooled couscous with veggies and toss. Add in feta and drizzle over the dressing. Toss all to combine.
Is that basil on top? Mint?
