This Green Goddess Chicken Salad is LEGIT. It’s so bright, zesty and light packed full of greens and herbs with no mayo! I created this recipe based off my love of the viral Green Goddess Chopped Cabbage Salad. I took the dressing from that salad and created a Chicken Salad to pair with it! To keep things easy just use a Rotisserie chicken I buy at least one a week to have on hand for chicken salad and chicken wraps. I could literally eat this dressing by the spoonful. This is so great alone, served with crackers or on sourdough bread with micro greens or sprouts! Added bonus my kids devoured this and asked me if I could immediately make it again. Enjoy!
GREEN GODDESS CHICKEN SALAD
1 rotisserie chicken shredded or 2 breasts cooked and shredded
1 baby cucumber diced
3 celery stalks diced
1/2 small white onion diced
2 tablespoons fresh parsley
1 tablespoon coarse sea salt
1 teaspoon pepper
DRESSING
1/3 cup olive oil
Juice of 2 lemons
2 tablespoons rice wine vinegar
1 cup fresh basil
1 cup spinach
2 garlic cloves
1 small shallot
1/4 cup unsalted cashews
1/3 nutritional yeast
1 teaspoon sea salt
1/2 teaspoon red pepper flakes
Place all dressing ingredients in a food processor and process until creamy.
Add shredded chicken, celery, cucumber, onion, and parsley to a bowl. Season chicken well with salt and pepper. Pour dressing over and toss all to coat. Add more olive oil and lemon juice if seems to dry. Enjoy!
