Meet my new favorite Fall salad. In my opinion, the best salads are all finely chopped so all the ingredients are close to the same size. This ensures you get equal parts of everything in each bite. I also love a well dressed salad, so add more dressing if your salad feels dry. The base of this Harvest Fall Crunch Salad is kale and Brussels. Topped with crisp apples, sunflower seeds and also sharp cheddar cheese. The vinaigrette is bright and warm at the same time. The combo of all the flavors is on point! Harvest Fall Crunch Salad
1 bunch lacinato kale, shredded
10-12 Brussels Sprouts, shredded
1 large honeycrisp apple, diced
1/3 cup sunflower seeds
1/2 red onion, diced finely
1 cup shredded Sharp White Cheddar Cheese
1/3 cup good olive oil
Juice of one lemon
1 teaspoon Dijon
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
- note I ended up doubling this dressing because I felt like the salad needed more.
