Herb Feta Roasted Salmon

My kids and I both love salmon. I cook it fairly frequently and I am always looking for new ways to cook it. This was super easy, literally took like 5 minutes to get it ready to cook. The flavors were so lovely together. You guys always ask if my kids eat what I cook and the answer is yes. Sterling devoured this but I will say Frances Moon coated her fish with ketchup- but hey whatever works she still ate the fish:)

I served it with my Greek Coucous and Tuscan Kale Salad. Enjoy!

H E R B F E T A R O A S T E D S A L M O N

1 pound Salmon

1/2 cup crumbled feta

3 tablespoons chopped chives

3 tablespoons chopped parsley

1 tablespoon chopped dill

juice of 1/2 lemon

1/2 teaspoon red pepper flakes

olive oil

Preheat oven to 350 degrees. Line a baking sheet with foil or parchment paper. Place the salmon on the sheet. Sprinkle with salt and pepper. Drizzle with olive oil.

Ina bowl combine tje parsley, chives, dill, feta and red pepper flakes. Toss together then sprinkle this mixture over the salmon. Juice half a lemon over top.

Bake at 350 degrees for about 25 minutes.

    We eat a lot of salmon too (my two year old not so much, but he’ll get there). We had lidey likes maple salmon last night and it was a hit!
