I love making big batches of salads for the week to have on hand for my lunches. This week I made tabouleh and wanted to share because it is so easy! I use the Near East box kind and jazz it up and it is really so good. Lately I have had the hardest time finding the Near East Tabouleh in stores so I have been ordering it off Amazon just to have on hand. The key to making this great tabouleh is lots of good olive oil, lemon juice and fresh herbs! This is also delicious with feta added in!

1 box Near East Tabouleh
3-4 tablespoons olive oil
juice of at least 2 lemons, maybe 3 depending on size
1 cup chopped cherry tomatoes
1 cup diced cucumbers
1 brunch green onions sliced
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley
2 tablespoons chopped chives
1 teaspoon salt
1 teaspoon pepper
Cook tabouleh according to the box- which is add one cup boiling hot water stir and set in fridge for 30 minutes. Add olive oil and lemon juice and salt and pepper and stir. Add in cucumbers, tomatoes, herbs, and green onions. Stir all together.
