This salad is one of my favorites. It is a spin on a BLT sandwich and so delicious. It is filled with so many Summer favorites like fresh corn and tomatoes. The dressing is so light just olive oil and lime juice. I usually make this ahead of time and chop the ingredients and then just toss and add the dressing right before serving! Enjoy!

1 package Mixed greens, chopped
1 pint cherry tomatoes sliced in half
4 ears corn
1/2 red onion thinly diced
10 slices bacon crumbled
1 avocado diced
1 cucumber diced
Feta cheese crumbled
1/2 cup olive oil
salt and pepper
Wrap corn in foil and roast in oven at 350 degrees for about 20 mins just to slightly cook corn. Let cool then cut off kernels. Cook bacon and crumble. Chop other ingredients and layer in bowl, then toss all together. Whisk together lime juice, olive oil and salt and pepper. Drizzle over salad.
