By now you guys know I live for salads in any way or form. I had been on a big quinoa roll for a awhile but have been switching it up lately with different grains and pastas. I love orzo, it is the perfect tiny pasta. This salad is loaded with lots of veggies and creamy feta cheese. It would be perfect for a Memorial Day cookout! I did a homemade dressing but I have made this before and used the Tessamae’s Green Goddess dressing and it works great if you don’t want to make your own! This is best served room temperature. Enjoy!

1 box orzo cooked according to package
1 cup cherry tomatoes halved
1 yellow bell pepper sliced thinly
1/2 red onion diced
1 small jar marinated artichoke hearts
2 small cucumbers diced
handful kalamata olives halved
4oz crumbled feta cheese
2 cups chopped fresh spinach
1/4 cup olive oil
3 tablespoons red wine vinegar
juice of 1 lemon
salt and pepper to taste
In a bowl whisk together olive oil, red wine vinegar, lemon juice and salt and pepper.
In a large salad bowl combine the cooled orzo and veggies and toss all together. Add in feta cheese and dressing and toss again. This is best served room temperature,
This looks amazing! Do you drain the artichoke hearts?
Yes drain and sometimes I add a little of the juice to the salad!
how much of this would you make if you were serving it to a large crowd?
This makes quite a large serving would probably serve 8-10 people with other sides.
Is there anyway you could make your recipes printable? I love making them but often have to screen shot them, leaving the picture out.

Yes you can definitely make ahead of time! It saves for a few days.
