
I love to meal prep for the week on Sundays. I love good a chopped salad and this one has literally all my favorite ingredients. The marinated artichokes just pair perfectly with the salty capers, tangy feta, savory sun dried tomatoes and chick peas! This gets better as it sits and marinates. I do find it best room temperature so pull out of the fridge 30 minutes before you want to enjoy!

M A R I N A T E D A R T I C H O K E H E A R T S A L A D
1.5 cups marinated artichoke hearts halved or quartered
1 cup sun-dried tomatoes
1/2 red bell pepper diced
2 baby cucumbers diced
1/2 red onion diced
4 tablespoons capers
1/2 cup halved kalamata olives
1 can chickpeas drained and rinsed
1/2 cup feta
2 tablespoons fresh parsley
D R E S S I N G
1/2 cup olive oil
1/2 cup red wine vinegar
1 garlic clove minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon oregano
Whisk together dressing ingredients and pour over the salad ingredients in a large bowl. Toss and enjoy!
