
Let’s make Marinated Summer Veggie Salad. This is a great way to clean out your fridge and use up any random veggies you have. The beauty of this recipe is it gets better the longer it sits as the flavors mesh and the veggies soak in the marinade. It’s all raw veggies so no cooking required. It’s crunchy, flavorful and filling! Plus it is gorgeous to look at with the rainbow colors.

MARINATED SUMMER VEGGIE SALAD
Ingredients
Half a head cauliflower chopped
1 crown broccoli chopped
1 small zucchini halved and sliced
1/2 red onion diced
1 small squash halved and sliced
1/2 green bell pepper diced
1 cup halved cherry tomatoes
1/3 cup roasted pine nuts
DRESSING
1 teaspoon salt
1 teaspoon pepper
Juice of 2 lemons
1/2 cup olive oil
2 garlic cloves minced
1.5 tablespoons Dijon
4 tablespoons apple cider vinegar
1 teaspoon Trader Joe’s Green Goddess seasoning or Italian seasoning would also work
Instructions
Place all raw veggies in a bowl. Then whisk together all dressing ingredients. Pour over salad. Sprinkle with fresh parsley. Finally, toss it all together. You can serve this right away but also gets better as the veggies sit in the marinade so saves a few days in fridge!
