I whipped together this lunch last week and have been eating it on repeat lately. The marinated bean salad piled high on warm fresh toast is just so good. The marinated beans are great alone as a salad but even better on the bread. I topped mine with the Trader Joe’s chili garlic crunch which is my new obsession, it is incredible!! Good bread is key for this toast, I like something with a crispy crust and soft center to soak up the bean marinade. Enjoy!
M A R I N A T E D W H I T E B E A N T O A S T
1 can white beans drained and rinsed
1/4 white onion diced
1/2 cup cherry tomatoes halved
4 tablespoons capers
1.5 tablespoons fresh parsley chopped
1.5 tablespoons fresh chives chopped
1 garlic clove minced
1/2 teaspoon red pepper flakes
2 tablespoons olive oil
1.5 tablespoons champagne vinegar
salt and pepper to taste
Mix all ingredients together in a bowl. Let everything sit about 30 minutes so the flavors can really set in and marinate. Toast a slice or two of bread and then scoop the bean mixture over top the warm toast. Drizzle with the Trader Joe’s Chili Garlic Crunch or Chili oil.
