I had kind of an indulgent weekend and wanted to close out the weekend on a healthy note so I made a big batch of this Mediterrean Kale Salad. This salad is packed full of all my favorite Mediterranean ingredients and also packed with flavor. I love the addition of quinoa to this salad it makes it heartier and I love the texture mixed in with the kale. The key to kale salads is to massage the kale first with olive oil before you add ingredients and dressing. This helps to soften the kale and better absorb the dressing. This is tossed with a light vinaigrette and will save in the fridge for 2-3 days. Enjoy!

1 head kale thinly shredded
1 cup cooked quinoa
2 baby cucumbers diced
1 cup cherry tomatoes halved
1 red or orange bell pepper diced
1/2 red onion diced
1/4 kalamata olives sliced
1/2 cup crumbled feta
D R E S S I N G
1/2 cup olive oil
juice of 2 lemons
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
1 garlic clove minced
Assemble all in a bowl and toss with dressing.
