
If you are in need of a high protein and delicious lunch you have to try my Mediterranean Tuna Salad! This comes together in about 10 minutes and is packed full of flavor. I replace mayo with a little Greek Yogurt to up the protein! And if you haven’t tried @fishwife their tuna (well all their canned seafood) is superior! This is great served over lettuce, with crispy pita chips or on bread! Enjoy !

MEDITERRANEAN TUNA SALAD
2 cans good quality tuna highly recommend @fishwife
1 small cucumber diced
1 small banana pepper diced
1 small orange bell pepper diced
2 roasted red peppers diced
Diced red onion
2 tablespoons fresh dill chopped
2 tablespoons fresh parsley chopped
Handful green olives sliced
1 tablespoons olive oil
Juice of one lemon
2 tablespoons Greek Yogurt
Salt and pepper to taste
Mix all in a bowl and enjoy!
