My friend Sarah passed along a recipe for Mexican Lasagna that she had made recently for her family and loved. I made it last week with a few changes and we all (minus Sterling who doesn’t like beans) loved it! It actually tastes just like a Taco Bell Mexican Pizza which is my JAM- I am so excited they are bringing the Mexican Pizza back! This takes about 10-15 minutes to put together and is such a great easy weeknight meal. Enjoy!
M E X I C A N L A S A G N A
6 flour tortilla shells
1 pound ground beef
1 packet taco seasoning (I swear by Siete)
1 cup Salsa
1 can refried beans
1 bunch green onions sliced
Taco Sauce (I used Taco Bell Hot Sauce)
8 oz Shredded Cheddar and 8z Shredded Mexican Cheese
Pickled jalapeños, diced tomatoes, sliced green onions and hot sauce for topping
Brown ground beef. Add in taco seasoning and water per packet instructions. Let simmer until water has cooked down. Stir in one cup of salsa. Set aside.
In a baking dish layer two flour shells, they will overlap a little. Spread a layer of refried beans. Then spread a layer of the ground beef, then a handful of green onions, then a layer of cheese and drizzle with taco sauce. Do this again, a layer of 2 shells, refried beans, ground beef, green onions cheese and taco sauce. Top with last two shells. Spread the remaining shredded cheese on top and rest of the green onions.
Bake at 350 degrees about 30 minutes until bubbly. I topped ours with diced tomatoes and pickled jalapeños!
