If you are a Southerner Tomato and Cucumber Sandwiches are a Summer Staple. Cucumber sandwiches are always served at bridal and baby showers around here and I love making them for beach and boat days. You don’t have to make them mini you can easily just cut them in half but I prefer the bite size version. Crust or no crust is totally up to you! I typically always do white bread but again up to you to use whatever bread you love. I do find buying the whipped cream cheese helps to blend and spread better on the bread. The fresh herbs and lemon juice make these little sandwiches so bright and full of flavor. These bite size sandwiches are addictive. Enjoy!

1 English Cucumber peeled and sliced very thinly
1 cup whipped cream cheese
juice of 1/2 a lemon
2 tablespoons fresh dill
2 tablespoons fresh chives
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
Using a knife or mandolin thinly slice your cucumber. You want the slices almost paper thin.
In a bowl add the whipped cream cheese, lemon juice, dill, chives, garlic powder, salt and pepper. Mix all together.
Lay white bread out and spread both sides with the cream cheese mixture. Layer the cucumber slices I do about 2 layers. Slice into quarters and enjoy.
