This is my newest lunch obsession. I have been really trying to focus on eating more protein. That means I have been getting innovative with my eggs and eating them often! This lunch is simple to make and I love that you are getting lots of greens and protein. The key is good quality feta! Always buy the block and crumble yourself! SAUTÉED GREENS + SPICY PESTO EGGS
1 cup fresh baby spinach
3-4 stalks collards or kale destemmed and chopped
1-2 tablespoons @kosterina Spicy Red Pepper Olive Oil
@jenniferfisherkitchen Spicy Salt
2 eggs
@gothamgreens pesto
Crumbled Feta
Trader Joe’s Italian Bomba Hot Pepper Sauce
Add Spicy Olive Oil to skillet and add in spinach and other greens. Season with Spicy salt and sautéed until cooked down. In that same pan fry two eggs.
Place eggs on top of sautéed greens. Crumble feta cheese over the top. Drizzle with pesto and Trader Joe’s Italian Bomba Sauce
