We recently made pasta salad while I was home over Christmas break. I love a good pasta salad so much. My mom shared with me an old recipe for a salad dressing she used to make and had been making again. It was so easy to make, only a few ingredients, and delicious! It is excellent on pasta or even a green salad. I am also going to share our entire pasta salad recipe because it was a huge hit. We filled it with lots of yummy toppings and then tossed with the dressing it was perfection! Enjoy!
We served ours with chicken salad, hummus and naan bread- so delicious.
P A S T A S A L A D + M O M ‘ S D R E S S I N G
1 box or bag spiral pasta
1 cup cherry tomatoes halved
3 baby cucumbers diced
1/2 red onion diced
pepperoni sliced thinly
salami sliced thinly
1 can sliced green olives
1 can sliced black olives
1 red bell pepper diced
1 container shredded Parmesan cheese
Cook pasta according to package, drain and place in a bowl. Add in cherry tomatoes, cucumber, diced red onions, bell pepper, pepperoni, salami, green olives, black olives, and shredded parmesan cheese. Toss together then toss again with dressing (recipe below)
D R E S S I N G R E C I P E
3/4 cup olive oil
1/4 cup sugar
6 tablespoons balsamic vinegar
1/2 teaspoon salt
3 tablespoon chopped parsley
Combine all in a shaker and mix together.
