I made this salad for Thanksgiving because as I mentioned before I am not a big Thanksgiving person. The food just doesn’t move me so I selfishly made this salad for me. It was all I ate Thanksgiving day plus Mac and cheese because that I can’t resist! This salad is a recreation of one of my most favorite salads at Glass Onion here in Charleston. It is lettuce piled high with fresh tomatoes, cucumbers, pickled veggies and blue cheese. The pickled veggies are such a great addition to the salad and pair so well with the tangy blue cheese crumbles! I served this with a store bought dressing, Sir Kensington’s Pepperoncini Vinaigrette but I think any red wine vinaigrette dressing would be great. Next time I may make my own! If you don’t toss with dressing this will save about a day before lettuce wilts too much. Enjoy.

Baby Gem or Romaine Lettuce
cherry tomatoes
cucumbers
green onions
pickled okra sliced in half
pickled green beans
crumbled blue cheese
Assemble all ingredients in a bowl and lightly toss. Add your favorite vinaigrette I love this one!
