I typically make a batch of energy balls most weeks. We love them for a mid-morning snack or a sweet treat. This energy balls recipe is kind of a combo of 3 different recipes I have tried added in a few parts of each. Obviously these would be a healthier option without the mini m&m’s, I add those in for my kids but I frequently make with just mini chocolate chips as well. Play around and add in what you love! We keep these stored in the fridge for a quick nibble on the go!

Energy Balls Recipe
(makes about 12-14 depending on the size)
Ingredients
1.2 cups old fashioned oats
3/4 cup shredded unsweetened coconut
1/2 cup peanut butter (we use the 2 ingredient all natural kind)
1/3 cup honey
1/4 cup mini chocolate chips
1/4 cup mini m&ms
1 tablespoon cinnamon
1 tablespoon vanilla
1-2 tablespoons chia seeds (could also do flax seeds)
2 tablespoons maple syrup
1/2 teaspoon salt
Instructions
Place all ingredients in a bowl and stir together. Stick mixture in fridge for 30 minutes. Remove and roll into small bite size balls. Store in the fridge.
