Pimento Cheese Pasta Salad + Blue and White Stripe Blouse

Sometimes when I lay in bed at night and can’t sleep I think about food and that is how this recipe came to fruition.  It was the middle of the night and I was wide awake a common occurrence these days.  I was thinking about recipes I wanted to try and thought man pimento cheese pasta salad would be killer.  I had something similar at Hen and Goat but it had grilled chicken in it.  Once I got home to Charlotte I told my parents my vision and we made it happen.   We all kept tasting it and figuring out what spices it needed.  I have to say the end product turned out pretty amazing.  We all loved it.  This would be the perfect side dish for a cookout!  I think this may have been my most requested recipe thus far on instagram.  I hope y’all enjoy it as much as we did! Enjoy!

P I M E N T O  C H E E S E  P A S T A  S A L A D 

1 box bowtie pasta (spirals would also be good)

1 bell pepper diced

1 bunch green onions sliced, thinly

1 cup cherry tomato sliced in halved

parsley

crumbled bacon

1 block (8 oz) sharp white cheddar cheese, grated

1 block (8 oz)  sharp orange cheddar cheese grated

1 8oz jar pimentos, drained

3/4 cup mayo

1 tablespoon Worcestershire

1/4 teaspoon dry mustard

1/4 teaspoon garlic powder

1/4 teaspoon cayenne

1- 2 tablespoons Texas Pete

4 oz cream cheese softened

salt and pepper to taste

 

Cook pasta according to box.  Drain and then toss with a little olive oil.    In a large bowl combine the 2 shredded cheeses, pimentos and next 6 ingredients.  Mix all together.  This makes the pimento sauce for the pasta.  Add the pasta to the pimento cheese bowl and stir all together to combine.    Stir in bell pepper, cherry tomatoes, and green onions.   Season with more and salt and pepper if needed.  Sprinkle the top with parsley and crumbled bacon.

    Is this better served cold or more room temp? Also, do you mix the cream cheese with the rest of the cheeses/pimento sauce? I’ve been wanting to try this and am making it for our salad theme supper club.
