I wanted to share two of our go to favorite veggie side dishes that are simply so easy to make and packed with flavor! My kids both love these so I make them fairly often!
R O A S T E D B R O C C O L I
2-3 heads broccoli chopped into bite size pieces
2 garlic cloves minced
1/2 cup toasted pine nuts
1/2 cup fresh basil sliced thinly
Juice of one lemon
1/2 shaved Parmesan
olive oil and salt and pepper to taste
Toss broccoli with olive oil, minced garlic and salt and pepper. Place on a baking sheet and bake at 350 degrees for about 20 minutes. Remove from oven and place in a bowl. Squeeze the juice of one lemon over top and stir. Add in basil, pine nuts and Parmesan Cheese.

Fresh okra, sliced in half
olive oil
chili powder
Aioli for dipping
Place okra on a baking sheet and drizzle with olive oil and salt and pepper. Generously shake chili powder over the top. Bake at 375 degrees about 15 minutes or until okra is tender. We like to serve ours with sriracha aioli for dipping!
