This is a new lunch I have really been loving. I have been on a real mission to eat more protein and cottage cheese has quite a bit of protein. You could add any veggies or toppings you have on hand, this is just a combo I really love. The key is to use Spicy Everything salt or Everything but the Bagel Seasoning and then finish with a drizzle of spicy olive oil. Those two things give it great flavor! This lunch comes together in minutes and is so filling and delicious! Enjoy!

Cottage cheese (I love Good Culture or Nancy’s brands)
halved cherry tomatoes
diced cucumbers
green onions
sliced green olives
sliced mini bell peppers
parsley
Red Clay Spicy Everything Salt

Layer the cottage in a bowl. I usually do about 2 scoops. Add tomatoes, cucumbers, green onions, green olives, mini bell peppers and parsley. Sprinkle all with Spicy Everything Salt and then drizzle with Spicy Red Pepper Olive Oil!
