I had been craving a Soba Noodle Salad and made this for lunch and WOW it was so good. Soba noodles topped with lots of colorful veggies and all tossed in a highly addictive creamy and spicy Asian dressing. I was eating the dressing by the spoonful after I made it. The key is adding in Chili Garlic Crunch- try it next level dressing! This salad is great room temp or chilled!
ADDICTIVE SOBA NOODLE SALAD
1 package soba noodles
1 cup edamame
1 cup sugar snap peas sliced
1 red bell pepper thinly sliced
1 cup shredded purple cabbage
1 baby cucumber thinly sliced
DRESSING
1/4 cup peanut butter
1/3 cup Tahini
2 tablespoons soy sauce
2 teaspoons rice wine vinegar
1 tablespoon minced ginger
1 garlic cloves minced
2 teaspoons maple syrup
1 teaspoon sesame oil
Juice of 1 lime
2 tablespoons chili garlic crisp (I used TJ one)
Sesame seeds for garnish
Cook noodles according to package. Drain and place in large bowl. Add in edamame, sugar snap peas, red bell pepper, purple cabbage and cucumber. Set aside.
Place all dressing ingredients in a bowl and whisk together. If sauce is too thick add a little water to desired consistency. Toss all together and enjoy!
