My sister recently shared a recipe with me for spicy noodles with peanut butter and kimchi that her friend recommended to her (you can see that original recipe HERE). It was a simple 3 ingredient recipe that of course I had to jazz up with lots of extra flavors and ingredients. It took a lot of testing and tasting but it ended up being really delicious. I love the flavor the kimchi gave ithe noodles. They were full of so many different flavors- sweet, salty, spicy, garlic, ginger and a burst of citrus. We served ours with my favorite chicken lettuce wraps- you can see the recipe HERE. I think these are best room temperature or chilled! Enjoy and adapt to your taste!

Ingredients
- 1 package Soba Noodles
- 1 cup Peanut Butter
- 3/4 cup Kimchi (plus extra liquid)
- 2 Limes, juiced
- 3 cloves Garlic, minced
- 2 tbsp Ginger, minced
- 1 tbsp Hot Sauce (Sriracha or similar)
- 1 tbsp Sesmae Oil
- 2 tbsp Soy Sauce
- 1 tbsp Rice Wine Vinegar
- Cucumbers + Sesame Seeds for topping (optional)
Instructions
- Cook soba noodles according to the package and drain and rinse.
- combine the peanut butter, kimchi, garlic, ginger, lime juice, soy sauce, hot sauce, rice wine vinegar, sesame oil. Add a little of the kimchi liquid if sauce seems too thick.
- Taste and season as needed per your palette.
- Toss the noodles with the sauce- it makes a lot so you may have extra but we love sauce.
- I topped ours with fresh chopped cucumbers and sesame seeds. Would also be great with green onions and cilantro.
