Spicy Sweet Potato Taco Salad

We try to eat pretty healthy during the week and always do some sort of taco night. The kids love it and so do we. I have really been into taco salads vs tacos lately. I had an abundance of sweet potatoes and decided to roast them for our salad. I seasoned them with spicy taco seasoning (Siete is the only brand I buy ) tossed them in the air fryer and they were crispy and full of such great flavor. Sterling was shoveling handfuls in his mouth he loved them so much. They were such a great addition to our taco salad. They paired so well with the refried black beans, ground beef, pico and sharp cheddar cheese! You can always use regular taco seasoning if you don’t want spicy. Enjoy!

S P I C Y S W E E T P O T A T O T A C O S A L A D

2-3 large sweet potatoes diced

2 packages spicy Taco Seasoning (we love Siete)

Refried Black Beans

Shredded Lettuce

Shredded White Cheddar Cheese

Pico de Gallo

Avocado

Hot Sauce (we used the Trader Joe’s Green Dragon sauce)

Dice the sweet potatoes and place on a baking sheet. Toss with olive oil. Add half the packet of Spicy Taco Seasoning and mix well, I like to use my hands to make sure the pieces are coated evenly. Then sprinkle with salt and pepper. Roast in the air fryer 350 degrees 20 minutes or roast in regular oven. Save the other half of the taco seasoning for another use.

Cook ground beef, drain excess oil and add in the other packet of taco seasoning and cook according to directions.

Layer Black beans, ground beef, lettuce, pico, sweet potatoes and shredded cheese in a bowl. Top with avocado and drizzle with hot sauce!
