1 20 oz package spinach thawed and squeezed dry
3 cups seasoned stuffing mix (I used Pepperidge Farms)
1 cup Parmesan cheese
6 eggs slightly beaten
3/4 cup soft butter
1 tablespoon garlic salt
1/2 teaspoon Accent Seasoning
1/2 teaspoon pepper
3 tablespoons grated onion
2 teaspoons hot sauce
Make sure the Spinach is squeezed dry completely. I use a dish towel and squeeze mine dry.
In a bowl mix all ingredients together. Then roll into small balls.
Place all the balls on a cookie sheet and refrigerate until ready to bake.
Bake 350 degrees 15-20 minutes
In a small bowl whisk together yellow mustard and honey. Taste and more honey as needed.

Pimento Cheese
Jalapeno Apricot jelly (or pepper jelly)
Place the cups on a baking sheets and fill with Pimento Cheese. Top with a scoop of the jelly. Bake at 350 degrees 10 minutes.
