I am here for all the Summer Salads! I made this corn salad for dinner Monday night and it was so fresh and delicious! We paired it with grilled chicken for the perfect light Summer dinner. My kids loved it too which is always a win in my book! It is so bright and vibrant and to mention so easy to make! Enjoy!
S U M M E R C O R N S A L A D
4 ears corn
Halved cherry tomatoes
1/2 red onion diced
1 orange bell pepper diced
Marinated mozzarella balls halved
1 cup shredded fresh basil
DRESSING
1/3 cup olive oil
Juice of one lime
Juice of one lemon
1/2 teaspoon salt
1/2 teaspoon pepper
Boil the corn about 10-12 minutes. Remove let cool and cut kernels off. Place in a bowl. Add cherry tomatoes, red onion, bell pepper, mozzarella balls and basil. Mix together dressing and pour over the salad. Add more salt and pepper to taste.
